Aonla fruit is one of the richest sources of vitamin c and it has wide application in food, medicinal and cosmetic industry. the post-harvest losses in aonla vary from 30-40 per cent due to its perishable nature and glut during harvesting time, which can be reduced by processing in to value added products.
