Design And Development Of A Small-scale Household Blancher Operated By Electric Power For Domestic Food Processing

Blanching is a basic process in food preservation, widely used for inactivating enzymes and microbes that could cause spoilage in vegetables and fruits. although large-scale industrial blanchers have been very commonly used in the food processing industry, there is an apparent gap in affordable, compact, and efficient blanching solutions for household use. blanching food traditionally in the home is mainly done by boiling or steaming in pots, and this method is inefficient, time-consuming, and very difficult to control, causing food degradation. this study intends to fill this gap by developing a small-scale household blancher running on electric power. the innovative equipment is meant to enable households to blanch small quantities of vegetables, fruits, and other products with minimal effort, optimal energy consumption, and consistent results. it is especially intended for individuals who want to preserve their food at home efficiently while ensuring quality, convenience, and affordability. the device is electricity powered, with a 2000-watt heating element to heat water to the required blanching temperature, ranging from 85°c to 95°c. it is fitted with an integrated thermostat to control temperatures precisely so that blanching conditions remain within the optimal ranges during the whole process. the timer allows the user to set the blanching duration, thus avoiding overblanched or underblanched food. the detachable water tank of the blancher makes the process more manageable and easier to clean after each use. the cooling system, which follows the blanching process, is designed to rapidly cool down the blanched food, effectively halting the cooking process and preserving the texture, color, and nutritional content of the products.
